This great healthy pancake recipe is awesome in its simplicity
We love pancakes as much as the next at NCC Home Learning. But with a few of us here in the office currently on a health-kick, we’ve been searching for ways to satisfy our pancake cravings whilst trying to remain as healthy as possible.
The beauty of this recipe is that it’s very quick to make and only requires three ingredients in its simplest form (you can add extras depending on what you can find in your kitchen).
Even better – to prep the mix just requires some mashing and stirring, so it’s a perfect way to enjoy pancake day whilst involving the kids.
Give it a go and let us know how you get on!
- 1 large, ripe banana
- 1 egg
- Put both ingredients in a mixing bowl and mash/stir until thoroughly combined.
- Heat a pan to a medium heat and add some oil (if you have any, use coconut oil instead for extra health points!).
- Cook for a few minutes on each side, until it’s golden brown all over – don’t forget to flip!
- Add any toppings to your taste
If you have any spices laying around the kitchen, these will add to the flavour – we think cinnamon and nutmeg work really well!
